I'm a self-taught home baker who bakes for fun. I started baking as a hobby a few years ago, and it quickly turned into a passion.
Friends have often told me I should set up a little business because they love my bakes. While I'm flattered by their praise, I'm content with baking as a hobby for now. I work full-time delivering HR Transformation and Change projects that are very demanding, fast-paced, and often very stressful. Not all change is easy, right? Baking has become a stress-release mechanism for me, a way to unwind and channel my creativity.
In my day job, I work with a lot of amazing people who inspire me to be my best self. As a way of saying thank you for being a part of my journey or to celebrate a successful project, I like to bake for them. It brings me joy to share my creations with others and see their faces light up with smiles when they see what I've made just for them. And I love the challenge of creating something bespoke for my friends and colleagues.
I don't have the formal training or experience of a professional pastry chef but I'm always eager to learn new techniques and I'm dedicated to putting my best effort into every creation. Whether it's a bespoke cake for a special occasion like a big bang go-live, a friend's birthday, or a batch of cookies to share at the office to celebrate little project milestones I pour my heart and soul into every creation.
Novelty cakes offer me an opportunity to explore new techniques and designs. Each cake presents a new challenge, whether it's incorporating a specific theme or design, or using unusual ingredients or techniques.

I made this cake for my son's graduation. The books and globe are all cake and a mouse standing on the globe symbolizes being on top of the world. Each book marks a stage leading to graduation and references his favorite Marvel series.

Surrounding the dragon are little figures - the pupils, each one eager to learn and improve their fitness levels.
I made this cake for my mother-in-law's birthday as she is a keen gardener. The base of the barrow is wood with a wheel made from jam jar lids. The main body is a Victoria sandwich with fondant sides airbrushed for a wood effect with piped flowers on top.
This cake was specially made to celebrate a joint birthday that coincided with the Easter holiday. To capture the spirit of Easter, I made a rabbit and put it atop a bed of green frosting, representing a grassy meadow. This rabbit is my first freestanding figure and took me ages to make it!

The first tier represents the implementation of a core HR system and the second tier represents the Onboarding project that I managed, featuring the names of all the team members who worked tirelessly to make it a success. The cake is designed with a superhero theme because everyone on the team is a big fan of superhero movies.

It might be one of the first 3D cakes I have made. I made it for my son's 18th birthday. The box is made to look like vintage wood and is filled with roasted coconut shavings. The bottle is a mint chocolate cake, cased in modeling chocolate and topped with a personalized wine label.

Following on from Luke's boxing glove cake (somewhere above), for his birthday cake I continued with a boxing theme. This time I was focusing on a boxing ring and tried to make it look more real by using miniature ropes.
This birthday theme was a request by someone who is a big trainer fan. The Nike box and the shoe are both real cakes with different flavours. The box is a cookie dough flavour and the shoe is fererro rocher. The box has been air brushed to create a more shiny effect and the shoe left as plain fondant to look more like leather.
While novelty cakes allow me to experiment with new designs and techniques, I also appreciate the beauty and timelessness of traditional cake designs. I find that traditional cakes can be just as challenging and rewarding to make as novelty cakes, as they require a mastery of classic techniques.
This simple and traditional honey cake was made with no special occasion in mind, but because my son likes this cake and I wanted to sweeten his day.
I baked this cake for my mother-in-law's birthday. I tried a new lemon sponge recipe (it came out really well!) and made a strawberry reduction. It is the first time I tried the chocolate border to decorate the cake - there are lessons learned there but the cake came out really well.

On the day of delivery, the scorching heat could have melted the flowers on the cake. To prevent this, I decided to present the cake in a hat box because it is sturdy enough to keep the blocks of ice on top of the lid as well as around the box during transport. It was a great relief to see the cake arrive in perfect condition.
